Why Filipinos love lechon Baboy?

In every occasion whether small gatherings like birthday parties, wedding reception , To a grand town fiesta. Lechon or internationally known as roast pig is the main food star. When hosting an event like house party if you don’t have lechon in the list of food you will prepare consider it as good party. But with Lechon added on the Menu good becomes very good. The term Lechon was from the Spanich word leche(milk) because it refers to the  suckling age of pig being roasted.  Love by countries being colonized by Spain in History. So how does lechon taste like? But first I’m going to explain how to prepare a lechon baboy so that you will know what to expect.

I don’t need to explain the messy stuff of cleaning a pig and its intestine because it is the part some people don’t wanna see. Ask a butcher to aid you in cleaning a pig.   After the pig is cleaned( of coarse intestine and other organs will be remove during cleaning leaving the inside hollow) look at this video to supplement your reading

 

So you must used wires to stich closed the opened body of the pig so that when rolling the pig on the metal skewer the stuff ingredients will not fall out.

So were done with the preparation and roasting.  Next part would be eating the Lechon. The Best part of the lechon was its skin. The more cruncher it gets the more yummier it will be, 2nd best part would be the Belly of the Pig you would smell the aroma and taste of lemon grass . Because all of the stuffed ingredients are on this side, 3rd Part would be the pigs ribs. There are 2 types of Lechon in the Philippines. The tagalog style and the Bisaya style. tagalog style was plain and no lemon grass and they use sarsa to compliment the taste, while Bisayan lechon uses the complete set of ingredients no need for sarsa. So if you happen to visit Philippines try tasting roasted pig. Just ask first if they stuffed it with lemon grass. No lemon grass taste incomplete. That is why the best Lechon baboy (Roasted Pig)  was the Bisayan style or Lechon Cebu( Bisayan mainland in Philippines).. Enjoy…
