I have been scouting for culinary schools the last six months. I was lucky that one of my friends knows one of the European Executive chefs on one of the 5 star hotels here in Manila. We met and he told me some inside information about culinary schools here in Manila. There are one school with different branches that say they are the best in their marketing because some of their students are winning competitions. This school also say that their do Quality education affordable. (you will find out what school it is by researching a little). This school has a very bad reputation among the chefs here in Manila, so bad that they are not any longer accepting OJT students from them.
The chef also told me to find out what school gives the best education and will prepare me to be a professional. He says that the most important thing is that you spend as much time as possible in the kitchen and NOT in the lecture room. He recommended one school that is mentioned in this forum here several times. Here you spend about 30 minutes in the lecture room and the rest of the time in the kitchen (3,5 -4 hours), 5 days a week.
I am enrolling there this coming June. 195.000 for 11 months including everything. There are schools that say they are cheaper but then you do not do that much time in the kitchen. Some of them only 6 – 8 hours per week in the kitchen compared to my school where I will be doing 18 – 20 hours per week.
So do yourself a favour before enrolling ask how many hours are really spent in the kitchen doing hands on. According to the European chef that is what really counts. He should know. He is the one that might hire you later.

Hi, I'm currently enrolled in the Associate International Degree program of AHA. To be honest, AHA is brutal; strict and adherent to the pressures of a kitchen. The degree is slow, very slow. Every week, we are given one culinary demo (theoretical) class and one culinary lab (practical). Since this a degree program, we are also given general education courses related to culinary; prod i.d. and purchasing, food safety and sanitation, business math, introduction to hospitality, and communication arts. The curriculum for culinary classes starts slow due to the fact that you tackle all the basics: knife skills, deboning, filleting, stocks, and so on and so forth. It may seem little, but during my 3 month stay, I have experienced stress like no other. You will have little to no social life when enrolled in AHA. If you are truly dedicated in cooking and have the patience to do so, AHA is a good choice. To those that want to experience more of the hands on approach, please apply for the diploma courses. Diploma courses are fast and focus its entirety in culinary arts.
