Caramel Candy for Your Valentine
As Valentines Day comes ever closer, perhaps you’d like to make some candy for your Valentine. Or maybe you or someone you knows have a sweet tooth, you could make these delicious caramels. I will give you the recipe.
!/2 cup butter dash of salt
2 cups white corn syrup
1 tsp vanilla flavoring
2 cups granulated sugar
2 cups evaporated milk
Put sugar, salt and corn syrup into 3 quart heavy saucepan, bring to a boil, and boil to a firm ball(245 F ), stirring occasionally. Gradually add the butter and milk, so slowly that mixture does not stop boiling at any time; continue to cook rapidly, with constant stirring to a medium ball(242F). The candy sticks and scorches easily toward the last, so be careful about stirring. Remove from heat, add flavoring, and stir well; then pour into a buttered 9 inch square baking pan. Cool thoroughly before cutting. When cold, turn out onto a molding board covered with wax paper and cut with a sharp, heavy knife, using a sawing motion. Wrap in waxed paper or in a moisture proof cellophane as ordinary cellophane will stick. Makes 2 pounds

I don’t think we have corn syrup in UK, I wonder if we call it something else.
