Watermelon Sorbet

Here is a delicious dessert for your barbecuews this summer.

6 cups seedless watermelon cubes

1 1/2 cups frozen limeade concentrate

1/2 cup light corn syrup

1 1/2 teaspoon lime zest

1 1/2 teaspoon finely chopped fresh mint

pinch of salt

Put together watermelon, limeade, corn syrup, lime zest, , mint and salt in a blender and blend it until smooth, if it gets on the sides, scrape it until it is with the rest of the mixture. Put in in a 9 x 13 inch baking dish or pan. Freeze two to four hours until firm

Let it sit at room temperature for 5 minute to soften when taken out of freezer. Break it into pieces by using a fork. Place frozen piece in food processor working in batches pulsing them for 145-25 seconds  or until almost smooth. Put in a container that is safe for the freezer. Freeze it with a tight cover  and use it within 7 days.

Let it sit in room temperature 5 minutes to soften before serving
